Grilled Tropical Fruit
- 1 can (20 Oz. Size) Pineapple Rings, Juice Reserved
- 2 whole Fully Ripe Plantains
- 2 whole Bananas
- 2 whole Ripe Mangoes
- 1/2 cups Brown Sugar
- 1/4 teaspoons Ginger
- Drain the can of pineapple rings and reserve juice to mix with brown sugar and ginger.
- Trim ends off of the plantains and cut them in half lengthwise and then cut them crosswise. You'll keep the peel on the plantains.
- Peel and then cut the bananas in the same way.
- Trim ends off of the mangoes and slice.
- Mix brown sugar, ginger and enough of the reserved pineapple juice to make a thin paste.
- Baste tops of fruit slices with the 'paste'.
- Heat grill to low and cover the grate with tin foil. Spray with cooking spray.
- Place plantains sugar side down and let cook a 2-3 minutes before placing the other, more tender fruit on the grill. Place remaining fruit, sugar side down on the grill and cook everything for 3-5 more minutes. Baste with remaining sugar mixture and turn the fruit over. Grill 3-5 minutes more or until done.
