Mamon Guidry’S Rice Dressing (Please Don’T Call It Dirty Rice)
- 2 pounds Ground Beef
- 1 pound Owens Or Other Hot Breakfast Sausage
- 1 clove Garlic
- 2 whole Yellow Onions, Chopped
- 1/2 whole Bell Pepper, Chopped
- 1 jar (small 4 Oz. Jar) Chopped Pimento
- 3 cups Basmati Rice
- 6 cups Water
- 2 Tablespoons Chopped Green Onions
- 1 teaspoon Cayenne Pepper
- 3 teaspoons Black Pepper
- 1 Tablespoon Kosher Salt
- This is my Cajun Grandmother's recipe. She always made this for Christmas and Thanksgiving. It was always my favorite and it is now the favorite of all my guests.
- Always use a heavy pot. A thin pot will only make the rice burn at the bottom. Brown all the meat. Add garlic to the pot till slightly brown. Add onions till they turn clear. Add bell pepper and pimento. Add rice and water. Add chopped green onions. Add cayenne, pepper and salt. Let water start boiling. Turn heat low. Cook for 25 minutes. Add more seasonings to taste.
