Greek Country Salad
- 1 large head iceberg lettuce
- 1 large cucumber, sliced
- 8 oz. Feta cheese, cubed
- 1/2 c. pitted ripe olives, halved
- 1/4 c. chopped parsley
- 3 Tbsp. lemon juice
- 1/2 tsp. oregano
- 1/8 tsp. pepper
- 2 c. cherry tomatoes, sliced
- 1 c. sliced radishes
- 2 (4 oz.) cans skinless, boneless sardines, drained
- 1/2 c. chopped green onions
- 1/3 c. olive or vegetable oil
- 1/2 tsp. salt
- Line a large shallow bowl with lettuce leaves.
- Break the remainder of the lettuce into bite-sized pieces and place in the bowl.
- Arrange tomatoes, cucumbers, radishes, cheese, sardines, olives and green onions over the lettuce.
- Sprinkle with parsley. Combine oil, lemon juice, oregano, salt and pepper in a screw-top jar and shake well to mix.
- Just before serving, shake salad dressing and drizzle over salad.
- Toss lightly before serving.
