Banana Nut Loaf
- 4 eggs
- 1 c. melted butter
- 4 ripe, medium bananas, mashed
- 1 tsp. baking soda
- 1 c. shredded coconut
- 1 c. maraschino cherries, halved
- 1 1/2 c. sugar
- 1 tsp. almond extract
- 2 1/2 c. flour
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- 1 c. chopped walnuts
- dough for 1 (9-inch) pie crust
- 1/2 c. brown sugar
- 1/2 c. white sugar
- 3 Tbsp. flour
- 1/4 tsp. salt
- 1 tsp. vanilla
- 1 1/2 c. warm cream
- 4 Tbsp. softened butter
- Prepare oven to 450u0b0.
- Line pie pan with rolled out dough. Prick dough all over with fork and cover with pie weights or snug pieces of foil.
- Bake 5 minutes.
- Remove foil and bake 3 to 4 minutes more, until it begins to brown.
- Take from oven and reduce heat to 375u0b0.
