Stuffed Eggplant And Tomatoes(Taua)
- 1/2 small onion
- 1/4 green pepper
- 2 Tbsp. fresh parsley
- 1/4 tsp. pepper
- 1/2 tsp. paprika
- 1/2 tsp. allspice
- 1 Tbsp. tomato paste
- 1 tsp. salt
- 2 medium eggplant
- 3 large tomatoes
- 1 lb. ground round
- Prepare stuffing:
- Finely chop onion and green pepper and parsley.
- Food processor with knife blade works great.
- Add salt, pepper, paprika, allspice to ground meat.
- Also add tomato paste. Mix with onion, pepper and parsley that has been chopped.
- Set aside.
- Lay tomato down, seam side down and cut slits about 1/2-inch apart.
- Do not go completely through tomato.
- Trim eggplant and cut into rounds.
- Put in colander and sprinkle with salt.
- Let drain for 20 minutes.
