Stuffed Eggplant And Tomatoes(Taua)

  1. Prepare stuffing:
  2. Finely chop onion and green pepper and parsley.
  3. Food processor with knife blade works great.
  4. Add salt, pepper, paprika, allspice to ground meat.
  5. Also add tomato paste. Mix with onion, pepper and parsley that has been chopped.
  6. Set aside.
  7. Lay tomato down, seam side down and cut slits about 1/2-inch apart.
  8. Do not go completely through tomato.
  9. Trim eggplant and cut into rounds.
  10. Put in colander and sprinkle with salt.
  11. Let drain for 20 minutes.
