Autumn Kale And Kiwi Berry Salad
- FOR THE DRESSING:
- 1/2 cups Plain Greek Yogurt
- 2 Tablespoons Mayonnaise
- 1 Tablespoon Fresh Dill
- 2 cloves (Small Size) Fresh Garlic, Peeled And Minced
- 1 Tablespoon Olive Oil
- 3 Tablespoons Apple Cider Vinegar
- 1 teaspoon Honey Or Agave Nectar
- 1 teaspoon Dijon Mustard
- 1/2 teaspoons Fresh Lemon Juice
- FOR THE SALAD:
- 4 cups Baby Kale
- 4 cups Field Greens
- 1 Small Onion, Sliced Very Thin
- 2 cups Dried Cranberries
- 1 cup Chopped Pecans
- 2 Carrots Grated (I Leave The Skin On)
- 2 cups Kiwi Berries
- 1 whole Medium Cucumber, Seeded And Diced
- In a medium bowl whisk together all of the dressing ingredients and set aside.
- To assemble the salad add all the salad ingredients into a large salad bowl. Toss gently and drizzle with dressing. Gently toss again to coat everything, then plate.
