Sausage Squares
- 1 lb. sausage, pork (hot or regular)
- 1/2 c. onion, chopped
- 1/4 c. Parmesan cheese, grated
- 1/2 c. Swiss cheese, grated
- 1 egg, beaten
- 1/4 tsp. liquid hot pepper sauce (do not use if hot sausage is used)
- 1 1/2 tsp. salt
- 2 Tbsp. parsley, chopped
- 2 c. buttermilk pancake mix or biscuit mix
- 2/3 c. milk
- 1/4 c. mayonnaise
- Cook
- sausage
- and
- onion
- over
- low heat until meat is browned.
- Drain.
- Add
- cheese,
- egg,
- liquid hot pepper sauce, salt and parsley.
- Make a dough by mixing the biscuit mix with the milk
- and mayonnaise.
- This makes a sticky dough.tpread half ofthe
- dough
- over the bottom of a well-greased 8-inch square pan.
- Cover the dough with the sausage mixture.
- Spread the remaining
- dough
- over the sausage mixture.
- Bake at 350u0b0 for
- 25 minutes
- or
- until done.
- (Cut into squares and serve hot.) Yields
- 9
- servings.

- good for breakfast or a light lunch.
- Can be made in advance and frozen.
