Chocolate Orange Nanaimo Bars
- FOR THE BASE:
- 1/2 cups Butter
- 1/4 cups Granulated Sugar
- 5 Tablespoons Cocoa Powder
- 1 whole Egg, Beaten
- 1-1/2 cup Chocolate Cookie Crumbs (like Oreo)
- 1 cup Unsweetened Coconut
- FOR THE ORANGE FROSTING FILLING:
- 1/2 cups Butter
- 2-1/2 Tablespoons Frozen Orange Juice Concentrate
- 2 cups Icing Sugar
- FOR THE CHOCOLATE TOPPING:
- 1 cup Chocolate Chips, Semisweet Or Dark
- 2 Tablespoons Butter
- BASE: Melt butter, sugar and cocoa together, over low heat in a saucepan or in the microwave. Remove from heat. Add beaten egg, then add Oreo crumbs and coconut and mix until well combined. Press into the bottom of a parchment paper lined, or greased, 9x9 inch baking pan. Refrigerate while you prepare the frosting layer.
- ORANGE FROSTING: Using an electric mixer, beat together the frosting ingredients until smooth. Spread evenly over bottom layer, and refrigerate to set for about an hour before adding the chocolate topping.
- TOPPING: Melt chocolate and butter together over low heat, or in the microwave (microwave the mixture for 30 seconds at a time, stirring in between each heat burst), just until the chocolate is melted. Spread quickly and gently over chilled frosting layer. Return to fridge until the chocolate sets. I usually set my timer for about 30 minutes so I remember to score the chocolate before it is completely set. This will help to avoid cracked tops...not that they won't taste just as delicious with a couple pieces of cracked chocolate!
