Shredded Beef Chimichangas
- 1 small onion, chopped
- 2 tsp. vegetable oil
- 1 envelope brown gravy mix
- 1 c. cold water
- 2 c. shredded, cooked roast beef
- 1 can (chopped) green chilies
- 1 tsp. pepper
- 8 flour tortillas
- additional oil (for frying)
- shredded Cheddar cheese
- sour cream
- salsa or hot pepper sauce
- In a skillet, saute onion in oil until tender.
- Reduce heat to medium.
- Sprinkle gravy mix over onion.
- Stir in water until blended.
- Add the beef, chilies and pepper.
- Cook until gravy thickens and mixture is heated through, stirring occasionally. Spoon about 1/4 cup off-center onto each tortilla.
- Fold up edge nearest filling; fold in both sides and roll up.
- Secure with toothpicks.
