Chicken, Beef Or Lamb Biryani
- 2 c. Basmati rice, soaked in water 1/2 hour
- 1 medium size chicken or 2 lb. beef or lamb
- 1 1/2 sticks butter or 1 stick butter and 1/4 c. vegetable oil
- 1-inch size ginger
- 1 whole garlic (medium size), peel and grind to a paste
- 5 to 6 cloves
- 1 1/4 tsp. aniseed powder
- 1-inch size stick cinnamon
- 3 or 4 whole cardamon, crushed
- 3 big or 5 small onions, sliced
- 4 or 5 medium green chilies, slit
- 4 medium cut tomatoes
- 1 tsp. turmeric powder
- 1/4 c. vegetable oil
- 2 c. milk or coconut milk
- 2 c. water
- 1 tsp. chili powder
- coriander leaves (1 small bunch), finely cut
- Cut into pieces chicken or beef; mash and set aside.
- Pour the 1/4 cup oil in a deep pan; season with 2 cloves, a small piece cinnamon stick and 1/4 teaspoon aniseed powder.
- Then add 2 tablespoons sliced onions and fry until brown.
- Then add 1/4 teaspoon of turmeric powder and 1 teaspoon of chili powder.
- Fry a little and add the meat; mix well and let cook with about 1/2 cup water.
- When 3/4 done, remove from stove.
