Cheesy Eggplant Pie
- 1 medium eggplant, peeled and cut into 1/4-inch slices
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 2 medium tomatoes, sliced
- 1 medium green pepper, cut into rings
- 4 oz. onion, sliced thin
- 4 tsp. oil
- 1/4 tsp. garlic powder
- 1 tsp. mixed Italian spices
- 4 oz. Mozzarella cheese, sliced
- Heat broiler.
- Arrange eggplant slices in a single layer on a baking sheet.
- Sprinkle with salt and pepper.
- Broil 6-inches from heat source for 8 minutes or until lightly browned.
- Heat oven to 375u0b0.
- Line a 10-inch pie plate with eggplant slices, browned side down, overlapping.
- Arrange alternating slices of tomato, peppers and onion atop the eggplant.
- Sprinkle with oil, garlic powder, remaining salt and Italian seasonings.
- Bake for 25 minutes.
- Top with cheese and bake an additional 15 minutes.
- Serves 2.
