Orange Muffins
- FOR THE MUFFINS:
- 2 cups Bread Flour
- 1/2 cups Sugar
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 2 whole Eggs, Beaten
- 1/2 cups Milk
- 1/2 cups Oil
- 1 Tablespoon Dried Grated Orange Peel
- FOR THE TOPPING:
- 1/3 cups Sugar
- 1 teaspoon Orange Juice
- 1 teaspoon Dried Grated Orange Peel
- 2 Tablespoons Butter, Melted
- Combine the flour, sugar, baking powder and salt in a mixing bowl. Set aside.
- Combine the eggs, milk, oil and 1 Tablespoon of orange rind in a liquid measuring cup. Make a well in the center of the dry ingredients, and add the eggs/milk mixture.
- Gently stir with a fork just until combined. The batter will be thick. Fill greased muffin cups about 3/4 cup full. You should be able to fill about 9 regular sized muffin cups.
- Now it's time for the topping. To make it, mix together the 1/3 cup sugar, 1 teaspoon grated orange rind and 1 teaspoon orange juice.
- Take the melted butter and dab it onto the tops of the unbaked muffins with a pastry brush. Sprinkle the topping over the melted butter.
- Bake at 400F for 15 minutes, maybe 20. Watch these because if they're overbaked, the sugar can burn. When a toothpick inserted into the center of the muffin comes out clean, they're done.
- Cool on wire racks, and store loosely covered. They're really best on the day they're made.
