Tuna-Vegetable Pilaf
- 1 c. uncooked white rice
- 1 can (14 1/2 oz.) chicken stock
- 1/4 c. water
- 2 Tbsp. lemon juice
- 1 tsp. dill
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. garlic powder
- 1/2 c. diced red pepper
- 1/2 c. diced green pepper
- 1/2 c. diced zucchini
- 1/2 c. broccoli florets
- 1/2 c. corn kernels
- 1 c. sour cream
- 1 (12 1/2 oz.) or 2 (6 1/8 oz.) cans white tuna in water, drained
- In heavy 1 1/2-quart saucepan (with tight lid) combine rice, chicken stock, water, lemon juice, dill, salt, pepper and garlic powder.
- Bring to a boil, cover and reduce heat and simmer 20 minutes.
- Stir in vegetables, cover and continue cooking 5 more minutes or until all the liquid is absorbed.
- Blend in sour cream and tuna.
- Serve hot or cold.
- Serves 4 to 5.
