Tortilla Soup
- 1 small onion, chopped (1/4 c.)
- 1 hot chili pepper, seeded and chopped
- 2 Tbsp. vegetable oil
- 1 large tomato, peeled and chopped (1 c.)
- 1 can condensed beef bouillon
- 1 can condensed chicken broth
- 1 1/2 c. water
- 1 1/2 c. tomato juice
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 1 tsp. salt
- 1/8 tsp. pepper
- 2 tsp. Worcestershire sauce
- 1 Tbsp. bottled steak sauce
- 3 tortillas, cut in 1/2-inch strips
- 1/4 c. shredded Cheddar cheese
- Saute onion, hot pepper and garlic, in oil, until soft, in a large saucepan, about 5 minutes.
- Add tomato, bouillon, broth, water, tomato juice, cumin, chili powder, salt, pepper, Worcestershire sauce and steak sauce.
- Bring to a boil; lower heat to simmer; simmer for 1 hour.
- Add tortillas and cheese; simmer 10 minutes longer.
