Dottie'S Chicken File Gumbo
- 1 large baking hen (frozen ones seem more tender), cut up into serving pieces
- 1 lb. regular smoked sausage
- 1 lb. hot sausage
- 1 c. ham, cut into small pieces
- 1/4 c. oil (canola)
- 1/2 c. all-purpose flour
- 1/2 bell pepper, chopped
- 1 large onion, chopped
- 1/2 c. green onions (end included), chopped
- 2 ribs celery, chopped
- 3 cloves garlic, chopped
- 2 Tbsp. parsley flakes
- 1/2 tsp. ground thyme
- 1/4 tsp. oregano
- 1/4 tsp. basil
- approximately 2 doz. oysters with juice
- gumbo file (fresh if available)
- salt and pepper to taste
- boiling water
- Place cut up chicken pieces in baking pan.
- Cover with foil and bake at 350u0b0 about 1 hour.
- Slice both sausages and bake same time as chicken but for only about 30 minutes.
- Drain fat from chicken.
- Drain fat from sausages and discard.
