Spinach Salad With Strawberry Vinaigrette
- FOR THE SALAD:
- 2 cups Fresh Spinach Leaves
- 2 ounces, weight Chicken, Cooked, Sliced
- 1/2 ounces, weight Feta Cheese (light)
- 1 Tablespoon Slivered Almonds
- 4 whole Strawberries, Sliced
- FOR THE VINAIGRETTE:
- 2/3 cups Strawberries, Sliced
- 1/2 whole Shallot, Chopped
- 1/4 cups Balsamic Vinegar
- 2 teaspoons Fresh Thyme
- 1/4 teaspoons Ground Pepper
- 1-1/4 teaspoon Dijon Mustard
- 1/4 cups Water
- On a plate, place all the salad ingredients.
- To make the strawberry vinaigrette, place dressing ingredients in a blender and process until smooth. Makes 1 cup dressing. Store in the refrigerator for up to a week.
