Cheesy Sausage Soup
- 1 pound Ground Sausage (I Used Italian)
- 1 cup Chopped Onions
- 1 cup Shredded Carrots
- 1 cup Chopped Celery
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Parsley
- 2 Tablespoons Butter
- 3 cups Low Sodium Chicken Broth
- 4 cups Peeled And Diced Potatoes
- 1-1/2 cup Milk
- 2 cups Shredded Cheddar Cheese
- 1 teaspoon Salt
- 1/2 teaspoons Ground Pepper
- 1/4 cups Sour Cream
- 1. In a large saucepan, brown sausage over medium heat. When it's done, drain off the grease and put the sausage into a large soup pot. In the same saucepan, saute onions, carrots, celery, basil and parsley in 2 tablespoons of butter until softened (about 10-12 minutes).
- 2. Add broth, veggies and potatoes into the soup pot with the sausage. Bring to a boil then cover the pot and reduce heat. Simmer for 10-12 minutes or until potatoes are tender.
- 3. Stir in milk, cheese, salt and pepper. Continue stirring until the cheese has melted. Remove from heat and stir in sour cream. Keep warm over low heat until ready to serve.
- 4. Serve with crusty French bread.
