Caramel (Burnt Sugar) Cake
- 1 c. sugar
- 1/2 c. boiling water (caramel mixture)
- 1/4 c. caramel mixture
- 1 c. liquid
- 1/2 c. soft shortening
- 1 1/3 c. sugar
- 3 eggs
- 2 1/2 c. sifted flour
- 2 1/2 tsp. baking powder
- 1 tsp. salt
- Grease and flour two (9-inch) pans or 13 x 9-inch oblong pan. Bake at 350u0b0 for 30 to 35 minutes.
- Melt sugar in heavy skillet. Remove from heat and slowly add boiling water, stirring constantly.
- Stir over low heat until all lumps are dissolved. Pour into measuring cup 1/4 cup caramel mixture and enough water to make 1 cup liquid cream shortening and sugar together until fluffy.
- Add eggs and beat thoroughly.
- Sift flour, baking powder and salt together.
- Add to shortening mixture alternately with caramel mixture.
