Berries And Feta Salad
- FOR THE SALAD:
- 2 cups Baby Spinach
- 3 cups Mixed Greens (or Torn Romaine Lettuce)
- 1/3 cups Dried Cranberries
- 1/4 cups Toasted Chopped Pecans
- 1/2 cups Fresh Blueberries
- 3/4 cups Fresh Strawberries, Sliced
- 1/3 cups Feta Cheese
- FOR THE DRESSING:
- 1 Tablespoon Flavorless Oil
- 1 Tablespoon Honey
- 3 Tablespoons Red Wine Vinegar
- 1/4 teaspoons Garlic Powder
- 1/4 teaspoons Kosher Salt
- 1/8 teaspoons Paprika
- 1 pinch Cayenne Pepper
- Freshly Ground Black Pepper, To Taste
- In a large bowl combine all of the salad ingredients. In a small bowl whisk together all of the dressing ingredients.Top the salad with the dressing or serve on the side.
- Notes: This salad is best if it is made the same day it is served so that the pecans stay crunchy, and the berries don't bleed on the lettuce.
