Chocolate Dipped Almond Butter Cookies

  1. Preheat oven to 350 degrees F.
  2. In large bowl, blend the almond butter and sugar together.
  3. Add the egg, salt, and baking powder into the almond butter mixture.
  4. Let the dough chill in the refrigerator for 10 minutes.
  5. Roll dough into quarter-sized balls and place on a baking sheet, 2 inches apart.
  6. Flatten each cookie with your hand and bake 10-12 minutes or until set in the middle and golden on the edges. Allow to cool before dipping.
  7. Once your cookies have cooled, melt the chocolate and oil together until smooth. You can do this in a saucepan over low heat, or in the microwave in 30-second heat bursts. Just make sure to stir between bursts, and make sure to stop once the chocolate is melted.
  8. Dip each cookie into chocolate and place on parchment paper to set.
