Diane'S Spinach Lasagna
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 3 garlic cloves, minced
- 3 Tbsp. vegetable oil (olive)
- 3 (8 oz.) cans tomato sauce
- 1/4 tsp. basil and oregano
- 1 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 1 lb. Ricotta cheese
- 1 egg
- 3/4 c. Parmesan cheese
- Mozzarella cheese
- 10 lasagna noodles
- Cook and drain noodles (Diane does not precook her noodles). Saute onion and green pepper in little olive oil.
- Stir in tomato sauce, oregano and basil.
- In separate bowl, combine spinach, Ricotta, egg, Parmesan cheese and green pepper.
- Stir into smooth mixture.
- Layer tomato sauce, noodles, spinach and Mozzarella in baking dish.
- End with Mozzarella cheese.
- Bake at 350u0b0 for 45 minutes.
