Creme De Menthe Cupcakes

  1. Mix cake mix according to the box's directions (you'll typically need water, eggs, and oil, as directed in mix package), adding 3 tablespoons creme de menthe to the batter. Bake cake according to package directions (this can be done as a 9x13 cake or 20 cupcakes).
  2. Allow cake (cupcakes) to cool completely. For a cake, frost with the fudge topping. For cupcakes, cut an "x" in the top of each cupcake and use a pastry bag filled with fudge topping to fill cupcakes with fudge.
  3. Allow Cool Whip to defrost in the refrigerator, and add the remaining 4 tablespoons creme de menthe. Frost the cake with the Cool Whip or pipe onto cupcakes. Keep cake/cupcakes in the refrigerator.
  4. Enjoy!
