Cranberry-Apple Salad
- 1 (1 lb.) can whole berry cranberry sauce
- 1 (3 oz.) pkg. strawberry jello
- 1/4 tsp. salt
- 1 red apple, cored and diced (do not peel)
- 1 c. boiling water
- 1 Tbsp. lemon juice
- 1/2 c. mayonnaise
- 1/4 c. chopped pecans
- Using a large boiler or saucepan, melt cranberry sauce over medium heat.
- Once the sauce has liquified, stir well and reduce heat.
- Mix into the sauce liquid, 1 cup boiling water and the jello.
- Stir until gelatin is completely dissolved.
- Add lemon juice and salt.
- Add to this mixture, the mayonnaise.
- Beat with hand beater, not electric mixer, until all ingredients are smooth. Fold in the diced apple and chopped pecans.
- Pour into a greased mold.
- (Use a dapple of mayonnaise to coat inside of mold.)
- Chill overnight, covered.
- This is great with Thanksgiving dressing.
