Broken Glass Jello Salad
- 1-1/2 cup Strawberry Jello
- 4 cups Boiling Water, Plus 1 Tablespoon For Gelatin
- 1-1/2 cup Ice Cubes
- 1 Tablespoon Gelatin
- 1 Tablespoon Cold Water
- 2 cups Whipping Cream
- 2/3 cups Icing Sugar
- Dissolve the jello in 4 cups boiling water. Add the ice and stir to cool slightly. Pour into a 9 x 13 pan and let set 4 hours or overnight.
- When the jello is set, cut it into 3/4" squares. Dissolve the gelatin by sprinkling it over 1 tablespoon cold water, then adding the remaining 1 tablespoon hot water and stirring to dissolve. Add to the cream and whip until stiff. Add the icing sugar.
- Gently mix the cubed jello and whipped cream together. The gelatin in the whipped cream should prevent it from getting runny. That makes it a good salad to bring to potlucks or serve to a crowd.
- Use other flavors of jello for different colors of broken glass.
