Sarah'S Mandarin Salad
- 4 Tbsp. sugar, divided
- 1/2 c. slivered almonds
- 1/4 c. vegetable oil
- 2 Tbsp. vinegar
- 1 Tbsp. minced fresh parsley or 1 tsp. dried
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. hot pepper sauce
- 1 bunch leaf lettuce, torn
- 1 can (11 oz.) mandarin oranges, drained
- 1 small red onion, sliced
- In a small skillet melt 3 tablespoons sugar over low heat. Add almonds; stir until coated.
- Cool, break into small pieces and set side.
- In a jar with a tight fitting lid, combine next six ingredients and remaining sugar; shake well.
- Just before serving, combine lettuce, oranges, onions and almonds in a large salad bowl.
- Shake dressing; pour over salad and toss.
- Yield:
- 4 to 6 servings.
