Sarah'S Mandarin Salad

  1. In a small skillet melt 3 tablespoons sugar over low heat. Add almonds; stir until coated.
  2. Cool, break into small pieces and set side.
  3. In a jar with a tight fitting lid, combine next six ingredients and remaining sugar; shake well.
  4. Just before serving, combine lettuce, oranges, onions and almonds in a large salad bowl.
  5. Shake dressing; pour over salad and toss.
  6. Yield:
  7. 4 to 6 servings.
