Empanada From Galicia – My Style
- 1/2 cups Olive Oil
- 2 whole Green Peppers, Chopped
- 2 whole Onions, Chopped
- 1 clove Garlic, Chopped
- 10 strips Roasted Red Peppers, Chopped (store Bought Or Roast Your Own)
- 2 cans Tuna Fish, 120 Grams Each
- 2 cups Tomato Sauce (homemade Or Canned)
- 2 pinches Salt
- 1 whole Hard Boiled Egg, Chopped
- 1 whole Pie Crust, Shop Bought
- 1 whole Egg, Beaten To Paint The Crust
- We will start with a sauce pan over medium heat. Add oil to the hot pan and then saute the green peppers, onions, and garlic.
- Every week, I roast peppers in the oven, peel them and put them in a plastic container in the fridge, cut in strips, (but if you don t want to do this, store bought roasted red peppers will work fine). They are quite useful, I use them in salads, with onion and canned tuna fish, with fried eggs, with breaded chicken breasts, whatever you want to make. So when the vegetables are cooked, I add the roasted red pepper to the veggie mixture. Put the tuna fish in the saucepan, then remove the pan from the heat. Add the tomato sauce and salt into all the ingredients and mix to combine.
- Open the pie crust, put it on a greased baking tray. I first cut a bit of crust from the outside edges, to have a little bit to decorate the top surface of the pie.
- Put the filling in the center of the crust, spread the chopped boiled egg on top, then fold the crust over and close the crust sealing the edges.
- Decorate with the remaining strips of pie dough. Cut a little hole in the centre of the crust so that the filling can breathe. Paint the pie with beaten egg
- Preheat the oven to 180u0b0C and bake it for 20 minutes or until golden.
