Spinach Khoresh
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 lb. stew beef, cut bite size
- 1/2 tsp. turmeric
- 1 tsp. salt
- 1 Tbsp. dried mint
- 3 c. boiling water
- 2 (10 oz.) pkg. frozen chopped spinach or 2 bunches fresh spinach, washed and chopped
- 1 c. chopped green onions
- 1 c. chopped leeks
- 1/2 c. chopped parsley or 1 1/2 Tbsp. dried parsley
- 1/2 c. chopped coriander or 1 Tbsp. dried coriander
- 4 Tbsp. lemon juice
- Brown onion and garlic in oil in a 4-quart saucepan on medium-high heat.
- Add meat and stir, cooking until meat is no longer red.
- Add turmeric, salt and mint, mixing well.
- Add water; cover and simmer for 15 to 20 minutes.
- Add all the greens and the potatoes, mixing well to thaw.
- Cover and simmer on low heat for 45 to 60 minutes or until the meat is tender.
- Add the lemon juice and, if too thick, add some water.
- Serve over steamed rice.
