Vanilla Poached Pears
- 1 cup Water
- 3/4 cups Vanilla Sugar (See Note)
- 1 whole Vanilla Bean (scraped And Save The Pod)
- 1 bottle (750ml Size) White Wine (Riesling Or Similar)
- 3 whole Pears (Anjou, Bartlett Or Bosc)
- Note: to make vanilla sugar, take 3/4 cup granulated sugar and add 3/4 teaspoon vanilla extra and mix.
- In a 4-quart saucepan add the water, vanilla sugar, scraped vanilla, vanilla pod and wine and bring to a boil.
- Prepare the pears by cutting a bit off the bottom, then using a vegetable peeler or knife, cut out the core but do not cut all the way through so you keep the tops in tact.
- Place the pears in the liquid, cover the pot and simmer for 30 minutes or until the pears are tender but not mushy. Remove the pears, place on a serving dish and refrigerate until ready to serve.
- Increase the heat and bring the liquid back to a boil to reduce until approximately 1 cup is left, approximately 20-25 minutes. Pour the syrup into a heat-resistant container or glass and refrigerate for 1 hour.
- Place a pear on a dish, pour over the syrup and enjoy!
