Strawberry Peanut Butter Oat Bars
- 3/4 cups All-purpose Flour
- 3/4 cups Whole Wheat Flour
- 1 cup Oats
- 1/2 cups Almonds, Ground To A Coarse Crumb
- 1 cup Brown Sugar
- 1/2 teaspoons Cinnamon
- 1 teaspoon Baking Powder
- 1/4 teaspoons Salt
- 10 Tablespoons Butter, Cold And Cut Into Cubes
- 3/4 cups Peanut Butter
- 18 ounces, weight Strawberry Jam (or Your Favorite Jam Of Choice)
- Preheat oven to 350 F. Butter a 9-by-13-inch rectangular pan.
- In a large bowl, mix together both flours, oats, ground almonds, brown sugar, cinnamon, baking powder and salt. Using a pastry cutter, cut in the butter. Next, cut in the peanut butter.
- Press half of the oat mixture into the prepared pan. Spread the jam over the top of the oat mixture. Sprinkle the other half of the oat mixture over the top and pat it down lightly.
- Bake until light brown, about 30 to 40 minutes. Let cool completely, and then cut into squares.
