Quinoa Bean Salad
- 1 cup Water
- 1/2 cups Dry White Quinoa
- 1 can 14 Oz Can, Green Beans, Drained
- 1 can 14 Oz Can, Yellow Wax Beans, Drained
- 1 can 19 Oz Can, Red Kidney Beans (rinsed And Drained)
- 1 can 19 Oz Can, Chickpea (garbanzo) Beans Rinsed And Drained
- 1 cup Red Onion, Diced
- 1 Red Pepper , Stem And Seeds Removed, Then Chopped
- 1/2 cups Sundried Oregano Salad Dressing (or Italian)
- 1/2 cups Finely Chopped Parsley
- Salt And Pepper
- Bring water to boil in a small saucepan then stir in quinoa. Cover the pan and simmer on medium-low heat for 15 minutes or until liquid is absorbed. Remove pan from heat and allow quinoa to cool.
- Combine remaining ingredients (except salt and pepper) in a large bowl. Stir in quinoa.
- Refrigerate for 1 hour. Season to taste with salt and pepper.
