Quinoa Bean Salad

  1. Bring water to boil in a small saucepan then stir in quinoa. Cover the pan and simmer on medium-low heat for 15 minutes or until liquid is absorbed. Remove pan from heat and allow quinoa to cool.
  2. Combine remaining ingredients (except salt and pepper) in a large bowl. Stir in quinoa.
  3. Refrigerate for 1 hour. Season to taste with salt and pepper.
