Old Cucumber Soup
- 6 cups Water, Plus 2 Cups For Blanching Pork Shoulder If Needed
- 1/2 pounds Pork Shoulder Bones
- 1 whole Old Cucumber, Deseeded And Cut Into 1-inch Slices
- 1 bulb Garlic, Peeled
- 2 Tablespoons Dried Oysters
- 2 Tablespoons Goji Berries (Kei Chi)
- 4 whole Red Dates (jujubes)
- 4 pieces Solomon's Seal (Yuk Chuk)
- 1 Tablespoon Salt
- Bring 2 cups of water to a boil. Place pork shoulder bone pieces into hot water and let them sit for 15 minutes. Drain and use.
- Place all the ingredients (including 6 cups water) in a pot and bring to a boil. Reduce to a simmer for 1 hour.
- Note: If you are using a crockpot like me, bring the 6 cups water to a boil on the stove first. Pour water into the crockpot over all the other ingredients. Boil on high for 4 hours or low for 6-8 hours.
- Serve!
