Chinese Chicken And Vegetables
- 1 chicken, cut up
- 2 Tbsp. lemon juice
- salt and pepper
- 3 Tbsp. vegetable oil
- 1 tsp. sugar
- 1 green pepper, chopped
- 1 pkg. frozen broccoli, thawed
- 2 green onions, chopped
- 1/2 c. chicken broth
- 2 Tbsp. cornstarch
- 2 Tbsp. soy sauce
- 2 ripe tomatoes, cut in eighths
- 4 c. hot cooked rice
- Spread chicken pieces on wax paper.
- Brush with lemon juice. Sprinkle with salt and pepper. Heat oil in large skillet.
- Add chicken; brown quickly on all sides.
- Drain oil.
- Add sugar, green pepper, onions, broccoli and chicken broth.
- Bring to boil; lower heat, cover and simmer for 10 minutes.
- Blend cornstarch and soy sauce; gradually stir in and mix well.
- Simmer briefly until thickened.
- Serve over rice.
