Chicken With Dumplings
- 2 1/2 to 3 1/2 lb. chicken
- 1 1/2 c. flour
- 1 tsp. salt
- 1/4 tsp. baking powder
- 1/4 c. liquid shortening
- 2 1/3 c. milk
- pepper to taste
- 2 c. chicken broth
- Place chicken in large kettle with water to cover, season with salt and pepper.
- Simmer until tender.
- Remove chicken from bone. Place chicken broth and 2 cups of the milk into kettle and bring to simmer.
- Sift together flour, salt and baking powder.
- Combine liquid shortening and 1/3 cup milk.
- Add liquids to flour mixture and mix well.
- Place dough between waxed paper and roll to 1/8-inch thick.
- Cut in 1 1/2-inch squares.
- Drop into kettle of simmering chicken, broth and milk.
- Cover and simmer 40 minutes.
- Add salt and pepper to taste to liquid.
- Good dumplings need pepper.
