Chicken And Wild Rice Soup
- 1 cup Onion, Chopped
- 1 cup Celery, Chopped
- 1 cup Carrot, Chopped
- 8 cups Water
- 5 cubes Chicken Bouillon
- 1 package Uncle Ben's Long Grain And Wild Rice Blend (6 Ounce Package)
- 10 ounces, weight Frozen Broccoli, chopped
- 2 cups Cooked Chicken, Chopped (can Use Rotisserie)
- 8 ounces, weight Velveeta Cheese, Cubed
- 1 can (12 Oz. Size) Cream Of Chicken Soup, Undiluted
- Saute onion, celery and carrots in a lightly greased Dutch oven over medium heat, for about 5 minutes. Add water, bouillon cubes, seasoning packet from rice, broccoli and chicken. Bring to a boil and stir in rice. Reduce heat to a simmer and cover. Cook for 5 minutes. Add cheese and soup. Cook, stirring constantly for 5 minutes or until cheese melts.
