Chayote, Pear, And Avocado Salad With Fresh Lime Dressing
- FOR THE DRESSING:
- 1 whole Lime, Juiced
- 1-1/2 Tablespoon Honey
- 2 Tablespoons Olive Oil
- 2 pinches Kosher Salt
- 1 pinch Black Pepper
- FOR THE SALAD:
- 1 whole Chayote Squash, Halved And Seeded, And Thinly Sliced
- 1 whole Firm Pear, Cored And Thinly Sliced
- 1 whole Avocado, Pitted And Thinly Sliced
- 1 cup Strawberries, Thinly Sliced
- 2 ounces, weight Crumbled Feta Cheese
- 2 Tablespoons Walnuts, Toasted And Chopped
- Optional Garnish: Chopped Fresh Cilantro Leaves
- 1) Whisk all of the salad dressing ingredients together in a bowl and set aside.
- 2) Arrange sliced chayote, pear, and avocado on the serving plate.
- 3) Top with sliced strawberries, feta, and walnuts. Whisk the dressing again and drizzle over the salad. Garnish with fresh cilantro leaves. Serves 6.
- * To toast walnuts, spread onto a cookie sheet. Bake at 325F for 8-10 minutes.
- *Assemble the salad on a large serving platter or on 6 individual salad plates.
