Health(Ier) Eggless Cookie Dough Balls
- 1/2 cups Nuts, Whole (I Used Walnuts, But You Can Use Any)
- 1/2 cups Old Fashioned Oats
- 1/2 cups Whole Wheat (or Whole Wheat Pastry) Flour
- 1/2 teaspoons Salt
- 3 Tablespoons Brown Sugar
- 1 teaspoon Vanilla Extract
- 2 Tablespoons Raw Honey, Or More To Taste
- 1/4 cups Peanut Butter Or Other Nut Butter Of Choice
- 3 Tablespoons Almond Or Regular Milk, Or Enough To Make A Slightly Sticky Dough
- 1/2 cups Chocolate Chips, Chopped Coarsely
- You may toast the nuts or leave them untoasted. To toast, place in a 350u0b0F oven for 8 minutes or until fragrant. Let cool.
- In a food processor, combine nuts, oats, whole wheat flour, salt, and brown sugar. Process until there are no longer any chunks of nuts and oats are fully broken down. Transfer to a bowl and add vanilla, honey, peanut butter, and almond milk. The dough should be sticky; if it is not, add more milk. Remember, the oats will absorb liquid in just a few minutes!
- Once everything is combined, add the chocolate chips and mix until thoroughly incorporated. If dough is too sticky to shape, stick it in the fridge for about 1/2 hour. When ready, form dough into tablespoon-sized balls and refrigerate or freeze. Enjoy!
