Cheesy Creamy Broccoli Soup
- 2 teaspoons Olive Oil
- 1/2 whole Yellow Onion, Minced
- 3 cloves Garlic, Minced
- 1 whole Large Broccoli Crown (or Two Small)
- 3/4 cups Sharp Cheddar Cheese (or Hard Cheese Of Your Choice)
- 1/2 cups Half-and-half
- 2 cups Vegetable Stock
- 1 dash Salt To Taste
- 1 dash Sriracha Chili Sauce (optional)
- Heat the olive oil in a skillet over medium heat and add the onion. Saute about 5 minutes before adding the garlic. Continue to saute until onion is very fragrant and translucent, about an additional 5 to 7 minutes.
- While the onion and garlic are sauteing, fill a large pot with about 1" of water and bring to a boil with a steamer basket inside. Place broccoli on top of the steamer and steam about 5 to 6 minutes or until slightly soft when poked with a fork. If you do not have a steamer, simply put the broccoli directly in the water and strain it when finished.
- Once broccoli is steamed, use tongs to place it into a blender or food processor. Add the rest of the ingredients (including onion mixture) and blend until smooth.
- Transfer the soup to a large saucepan and simmer for 15 to 20 minutes, allowing the soup to get hot and flavors to cook together.
- Serve with additional grated cheese and sriracha on top.
