Blueberry Fields Salad
- 1 cup Walnuts
- 1/2 cups Balsamic Vinegar
- 1/3 cups Blueberry Preserves
- 1/3 cups Olive Oil
- Salt And Freshly Ground Pepper, To Taste
- 1 package (5.5 Oz. Size) Spring Green Mix
- 1 package (5.5 Oz. Size) Baby Spinach Mix
- 2 cups Fresh Blueberries
- 1 whole Small Red Onion, Halved And Sliced
- 1 cup Crumbled Blue Cheese
- Heat walnuts in a small skillet over medium-high heat, stirring constantly, for 5 minutes or until toasted and fragrant.
- Whisk together balsamic vinegar, blueberry preserves, olive oil, and salt and freshly ground pepper to taste in a small bowl.
- Combine walnuts, salad greens, blueberries, onion, and blue cheese in a large bowl. Drizzle with desired amount of vinaigrette, and toss to combine. Serve immediately with remaining vinaigrette.
