Lovage, Lettuce, Pea And Cucumber Soup
- 1-1/2 Tablespoon Butter
- 1 whole Onion, Finely Diced
- 1 teaspoon Fresh Thyme Leaves, Chopped
- Salt And Freshly Ground Black Pepper
- 4 stalks Young Lovage, Chopped
- 24 ounces, fluid Vegetable Stock
- 1 whole Small Butter Lettuce, Finely Shredded
- 3-1/2 ounces, weight Peas
- 1/2 whole Cucumber, Cut Into 5mm Dice
- Thick Yoghurt, To Finish
- 4 leaves Lovage, Shredded, For Garnish
- 1. Warm the butter in a large saucepan over a medium-low heat. Add the onion, thyme and a pinch of salt and pepper, and saute until the onion is soft and translucent, about 10 minutes. Add the lovage stalks and saute for a couple of minutes.
- 2. Pour in the stock and simmer for 10 minutes. Add the rest of the vegetables (keep back some lovage leaves to garnish) and simmer for five minutes. Season and serve with dollops of creme fraiche or thick yoghurt and a scattering of lovage leaves.
