Chocolate Chip Lava Cake

  1. Preheat oven to 350 F. Spray 6 individual serving size oven safe ramekins with cooking spray. I used ones that were 4" in diameter. Set aside.
  2. In a large bowl, combine butter and sugars until light and fluffy.
  3. Add the eggs, one at a time, beating well and scraping sides of the bowl after each. Mix in vanilla. Set aside.
  4. Sift the flour, baking soda and salt together in a small bowl. Add the dry ingredients to the butter-sugar mixture. Mix until combined. Fold in the 16 ounces of chocolate chunks.
  5. Divide dough into 12 sections. Place one section in the bottom of each prepared ramekin. Place a tablespoon of semi-sweet chocolate chips in the very center of each. Top with another section of cookie dough and press to seal sides.
  6. Place ramekins into the preheated oven and bake for 20-25 minutes. Top with ice cream if desired.
