Chocolate Chip Lava Cake
- 1 cup Unsalted Butter, Room Temperature
- 1 cup Light Brown Sugar, Packed
- 1/2 cups Sugar
- 2 whole Eggs
- 1-1/2 teaspoon Pure Vanilla Extract
- 3 cups Flour
- 2 Tablespoons Flour
- 1 teaspoon Baking Soda
- 1-1/2 teaspoon Salt
- 16 ounces, weight Baker's Semi-sweet Chocolate Squares, Coarsely Chopped (plus One Extra For Shavings On Top If Desired)
- 6 Tablespoons Nestle Toll House Semi-sweet Chocolate Chips
- Preheat oven to 350 F. Spray 6 individual serving size oven safe ramekins with cooking spray. I used ones that were 4" in diameter. Set aside.
- In a large bowl, combine butter and sugars until light and fluffy.
- Add the eggs, one at a time, beating well and scraping sides of the bowl after each. Mix in vanilla. Set aside.
- Sift the flour, baking soda and salt together in a small bowl. Add the dry ingredients to the butter-sugar mixture. Mix until combined. Fold in the 16 ounces of chocolate chunks.
- Divide dough into 12 sections. Place one section in the bottom of each prepared ramekin. Place a tablespoon of semi-sweet chocolate chips in the very center of each. Top with another section of cookie dough and press to seal sides.
- Place ramekins into the preheated oven and bake for 20-25 minutes. Top with ice cream if desired.
