Pumpkin Spice Bars
- 4 eggs
- 2 c. sugar
- 1 (15 oz.) can solid-pack pumpkin
- 1 c. vegetable oil
- 2 c. flour
- 2 tsp. ground cinnamon
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. ground ginger
- 1/4 tsp. ground cloves
- 1/2 c. dried cranberries
- 1 (16 oz.) can or 2 c. cream cheese frosting
- In a mixing bowl, beat eggs, sugar, pumpkin and oil until blended. Combine the flour, baking powder, cinnamon, baking soda, salt, ginger and cloves; add to pumpkin mixture just until combined.
- Stir in cranberries.
- Pour into a greased 15 x 10 x 1-inch baking pan.
- Bake at 350u0b0 for 25 to 30 minutes or until a toothpick inserted near the center comes out clean.
- Cool completely on a wire rack.
- Frost with cream cheese frosting. Yield: 2 1/2 dozen bars.
