Corn Casserole
- 1/4 cups Butter, Softened
- 1/2 blocks Cream Cheese, Softened, 8 Ounce Block
- 1 can Cream-style Corn, 15 Oz. Can
- 2 cups Corn Kernels
- 1 can Chopped Green Chilies, 4 Oz. Can (or Use 1/2 Can If Some Don't Like It Spicy)
- 1/4 whole Medium Onion, Finely Chopped
- 1/2 teaspoons Salt
- 1/4 teaspoons Pepper
- 1 can French-fried Onions, 2.8 Oz. Can
- Preheat oven to 350 F. In a large bowl, beat together the butter and cream cheese. Stir in the cream-style and kernel corn, green chilies, onion, salt and pepper. Transfer to a greased 8x12 baking dish. Bake uncovered for 20 minutes. Remove from oven and sprinkle with fried onions. Bake 15 minutes longer.
- Another way to prepare this corn dish is in a slow cooker. Place all the ingredients except the fried onions in a small crockpot. Heat on medium or high for 2-3 hours, stirring once or twice. At serving time sprinkle the fried onions on top.
