Hominy Leek Breakfast Casserole

  1. Preheat oven to 350 F. Spray an 8x8 baking dish with cooking spray and set aside.
  2. In a blender or food processor, blend hominy for about 1 minute, or until ground. It should not be completely smooth but should have the consistency of grits.
  3. Combine the hominy and all remaining ingredients (except 1/2 cup of the cheese) in a large bowl and mix well, until everything is completely combined. Pour into the prepared baking dish. Top with remaining 1/2 cup cheese.
  4. Bake for 1 hour, or until set and browning at the edges. Allow to sit for about 5 minutes before cutting into slices and serving.
