Shrimp Scampi Primavera
- 1 lb. large shrimp, cleaned and deveined
- 1/4 c. chopped parsley
- 6 cloves garlic
- 1/4 c. olive oil
- 1 Tbsp. butter
- 2 celery stalks, sliced at a slant
- 2 c. chopped broccoli
- 2 tomatoes, cut in wedges
- 1/2 bell pepper (green or yellow), sliced thin
- 1 tsp. salt
- 1/2 tsp. lemon pepper
- 2 Tbsp. white cooking wine
- 1 lb. thin fettuccini or linguini
- lemon wedges
- In large stir-fry skillet, place oil, shrimp, garlic, butter, celery, chopped broccoli, tomatoes, bell pepper, parsley, salt and lemon pepper.
- Stir-fry until shrimp are pink and vegetables are tender, but not soft.
- Add wine.
- Stir-fry for five minutes total. Remove from heat.
- Set aside.
