Homemade Cake Mix
- FOR THE DRY MIX:
- 2-3/4 cups Flour
- 1-3/4 cup Super Fine Sugar
- 2 teaspoons Baking Powder
- 3/4 teaspoons Salt

- FOR THE ASSEMBLY:
- 3/4 cups Unsalted Butter
- 5 whole Egg Whites
- 1 cup Milk
- 2 teaspoons Vanilla Extract
- 1/2 teaspoons Almond Extract
- The ingredients I have listed are specifically for a white cake. I have separated into wet and dry ingredients. If you want to do this as a chocolate cake (or any flavor really) you can just follow the same guidelines to make your own cake mix!
- To make dry mix just sift together all dry ingredients including the sugar and place in an air tight container, you'll need at least a 5 cup mason jar since the ingredients total about 4 1/2 cups. (I would not recommend storing for longer than three months.)
- When ready to make cake:
- In bowl cream butter. Add egg whites one at a time until fully incorporated. Add milk, vanilla, and almond extract. Combine.
- Slowly add dry ingredients to the wet and mix until just incorporated.
- Bake at 325F to 350F for 20-30 minutes. Be sure to check at 25 minutes.
- This can fill two 8- or 9-inch rounds or be used as cupcakes.
