Homemade Cake Mix

  1. The ingredients I have listed are specifically for a white cake. I have separated into wet and dry ingredients. If you want to do this as a chocolate cake (or any flavor really) you can just follow the same guidelines to make your own cake mix!
  2. To make dry mix just sift together all dry ingredients including the sugar and place in an air tight container, you'll need at least a 5 cup mason jar since the ingredients total about 4 1/2 cups. (I would not recommend storing for longer than three months.)
  3. When ready to make cake:
  4. In bowl cream butter. Add egg whites one at a time until fully incorporated. Add milk, vanilla, and almond extract. Combine.
  5. Slowly add dry ingredients to the wet and mix until just incorporated.
  6. Bake at 325F to 350F for 20-30 minutes. Be sure to check at 25 minutes.
  7. This can fill two 8- or 9-inch rounds or be used as cupcakes.
