Holly Cookies

  1. Get several cookie sheets out and line them with wax paper.
  2. In a double boiler, melt butter. Add marshmallows and stir until completely melted. Add vanilla, stir, then green food coloring. I like my cookies a deep true holly green. But you can decide how green you want your cookies. Stir well, this takes a minute!
  3. Now, carefully and slowly add the corn flakes and gently stir to cover them in the green mixture. Reduce the heat just enough so that the mixture stays warm but you don't cook the flakes. You will have to stir this occasionally.
  4. I keep a small cup with water on the stove to keep spoons wet to make things easier. Drop small spoonfuls of the mixture onto the wax-paper-covered cookie sheets and have a helper drop 3 Red Hots onto the cookie right away. You can do it but it will take a lot longer to make them. Wet the spoons briefly in your cup of water, and get some more mix and repeat dropping spoonfuls onto wax paper and Red Hots. You will end up with 48-60 cookies.
  5. When finished, dump the hot water into the pan with marshmallow mix and that makes clean up a dream!
  6. Store in an airtight container. They will keep for a couple of weeks if you can keep your kids and neighbors from devouring them!
  7. The cookies are beautiful and I have been asked at open houses and fairs how much my holly pins are!
