Happy Pumpkin Bread(24 Slices; A Low Sugar Recipe)
- 1 2/3 c. canned pumpkin
- 1/2 c. frozen unsweetened orange juice
- 1/3 c. water
- 1 large, very ripe banana, mashed until syrupy
- 1 tsp. pure vanilla extract
- 2 1/4 c. whole wheat flour
- 1/4 c. flour
- 1/2 tsp. baking soda
- 1 1/2 tsp. baking powder
- 1 tsp. pumpkin pie spice
- 1 tsp. cinnamon
- 1 tsp. grated nutmeg
- 3 egg whites
- 1/2 ripe banana, mashed until syrupy
- 1/2 c. chopped dates
- 1/2 c. Grape-Nuts
- Preheat oven to 375u0b0.
- Place pumpkin, frozen fruit juice concentrate, water, whole mashed banana and vanilla in a mixing bowl and blend well.
- Sift together flours, baking soda, baking powder, pumpkin pie spice, cinnamon and nutmeg.
