White Chocolate And Cherry Blondies

  1. Place the sugar, chocolate chips and butter into a saucepan and heat over very low heat (or use a double boiler) until the sugar and chocolate have melted. Throw the flour and salt into the melted mixture. Blend well. Remove from the heat.
  2. Blend the eggs and vanilla extract together. Pour the egg mixture into the flour mixture and blend well.
  3. Pour the mixture into a 9x13-inch baking pan, lined with parchment paper (for easy removal) and top with the chopped cherry pieces.
  4. Bake in a 350F oven for 30-35 minutes or until a toothpick inserted into the center of the pan comes out clean.
  5. In the microwave, melt half a cup of white chocolate chips with a teaspoon of vegetable oil (melt on 30 second increments, stirring in between and continuing for additional 30 second increments, just until melted) and drizzle over the dessert.
  6. Allow to cool in pan for about 10 minutes before cutting into bars.
