Whole Wheat Stevia Banana Chocolate Chip Bread
- 2 whole Eggs
- 3 whole Bananas
- 1/3 cups Milk Or Non-dairy Milk
- 2/3 cups Unsweetened Applesauce
- 1 teaspoon Vanilla Extract
- 1/4 teaspoons Salt
- 1 teaspoon Baking Soda
- 1 teaspoon Stevia Powder
- 1-1/2 teaspoon Cinnamon
- 1/4 cups Ground Flaxseed Meal
- 2 cups Whole Wheat Pastry Flour
- 1 cup Semi-Sweet Chocolate Chips
- 1. Preheat oven to 350 degrees (F) and spray a 9" x 5" loaf plan with non-stick spray.
- 2. Beat eggs by hand, mash in bananas, and then add all wet ingredients, mixing well.
- 3. Mix in salt, baking soda, Stevia, cinnamon, and flaxseed meal.
- 4. Mix in flour.
- 5. Fold in chocolate chips, or pour half of batter into pan and sprinkle a layer of chocolate chips.
- 6. Pour remaining batter into pan.
- 7. Bake 45 minutes, or until toothpick comes out clean (given you don't poke it straight through a chocolate chip!) when inserted.
