Dark Chocolate Strawberry Pie
- 2 whole Uncooked Pie Crusts
- 1/4 cups Dark Chocolate Chips
- 5 cups Strawberries, Rinsed, Hulled And Chopped
- 1/2 cups Brown Sugar
- 1/2 cups White Sugar (Divided Use, Reserve 1/4 Cup For Sprinkling At The End)
- 1/2 teaspoons Cinnamon
- 1 whole Lemon, Juiced
- 3 Tablespoons Cornstarch
- 2 Tablespoons Butter
- Roll out one batch of pie dough to fit into a greased pie pan. Sprinkle chocolate chips over the bottom of the pie shell.
- You have two options for the strawberries.
- Option one: Combine berries, brown sugar, 1/4 cup white sugar, cinnamon, lemon juice and cornstarch in a bowl. Stir together and pour into the pie shell.
- Option two (the option I chose): At least an hour before or up to the day before you want to make the pie, combine berries, brown sugar, 1/4 cup white sugar, cinnamon, lemon juice, and corn starch in a bowl. Stir together and place in the refrigerator to sit. When it is time to make the pie, drain out the additional liquid. Pour strawberries into the pie shell.
- Preheat oven to 350 F.
- Once you have your filling in the bottom crust, roll out the second pie crust and cut it into strips. Form a lattice topping on top of the strawberries using the pie dough strips.
- Cut the 2 tablespoons of butter into tiny pieces and dot them in between the openings of the lattice work. Sprinkle the pie with the remaining sugar. Bake for 1 hour and 20 minutes.
- Serve with fresh whipped cream or vanilla ice cream. Or if you are like me, both.
